At the moment we have following dishes on the menu:

Cucumber with oysters, frillice salad and warm cream fraiche with yuzu and dill

Marinated fennel with raw Norwegian scallop and sauce on olive oil and citrus

Grilled carrots with peas, fermented garlic and creamy white wine sauce

Tatar of veal with green olives, new onions and umeboshi

Fried heart salad with radishes, pickled gooseberries and Svendbo cheese

Poached skate wing with cauliflower, beans and mustard remoulade

Pork cheeks and grilled pork tenderloin with BBQ on elderflower and new potatoes

Comte with figs, hazelnuts, balsamic and toasted bread

Baked rhubarbs with ice on wheat, sunflower seeds and woodruff

Strawberries with lime, lavender, rosehip and airy long pepper
